Egusi is a delicious and hearty stew made with seared chicken, a rich vegetable stew, and a ground pumpkin seed paste. It's seasoned with various spices and can be tailored in spiciness with the addition of jalapeño. What you need

tsp garlic powder

tsp onion powder

tsp cayenne pepper

tsp salt

tsp black pepper

tsp paprika

onion

cup smoked haddock

ginger

clove garlic

jalapeno

red bell pepper

tomato

bunch spinach
cup raw pumpkin seeds

cup vegetable broth
Instructions
1. Slice the chicken thighs into smaller pieces & marinade them with the seasonings mentioned above. Add into a pan, and sear chicken on all sides (about 5-7 minutes). 2. In the meantime, blend your red bell pepper & tomatoes together to form a liquid paste. 3. Then, to the same pot, add all of the stew ingredients, including the blended red bell pepper & tomatoes, minus the spinach / kale. 4. Cook all together for 15 minutes, until everything is starting to soften. 5. In the meantime, blend the raw pumpkin seeds with the vegetable / chicken broth, and then add that paste into the pot as well. 6. Simmer all together for 30-40 minutes, on low. 7. Add some chopped kale / spinach at the very end.
