Borscht is a traditional Eastern European soup known for its rich flavor and vibrant color, made primarily with beets, a medley of vegetables, and optionally meatballs or beef stew meat.

What you need

onion

head cabbage
potato

carrot

oz black beans

tbsp tomato paste

pinch bay leaves

pinch salt

pinch black pepper

lb ground beef
egg

cup breadcrumb
Instructions
1. Shred 4 medium beets and set aside. 2. Dice 1 onion and half a small head of cabbage. Dice 4 potatoes and shred 4 carrots. 3. Optional: rinse and drain a 16-ounce can of black beans. 4. In a large pot, combine the shredded beets with the prepared meatballs. Boil the ingredients until the beets are soft, approximately 15 minutes if they are cut into smaller sizes. 5. Remove the beets and add all veggies into the boiling pot, stirring well to mix. 6. Once the beets have cooled, shred them further and add back into the pot. 7. Boil everything together for 45 minutes. If preferred, add some beets at the end so there is only about 10 minutes left to boil all together.
