Veggie Fritters are delicious and nutritious patties made primarily from grated carrots, potatoes, and zucchini, combined with egg, flour, and seasonings, then pan-fried to crispy perfection. Perfect as a light snack or side dish.

1. Grate the carrot, potato, and zucchini, and squeeze out all of the water using a nut milk bag. 2. Add the egg, the flour, the parmesan, and the seasonings to the grated vegetables. 3. Mix all ingredients together. 4. Add a spoonful onto a hot pan, and pan-fry for 5 minutes on each side, until golden brown and crispy.
